After selecting the best Chianti DOCG wines, a scrupulous and careful process of slow acetification begins, followed by a long rest time in larch and Slavonia oak vats, which allows obtaining this excellent vinegar. Its flavour is full, intense, with a marked acidity and big personality. It is very suitable for seasoning green and mixed salads with raw vegetables combined with boiled, roast, and grilled meats; it characterizes in a unique way cooked vegetables, courses that must be marinated, and red sauces. If two teaspoons of this vinegar are added to fruit salad with strawberries, one hour before eating it, its scents are exalted.
